This is a simple yet flavorful breakfast sausage recipe. Best of all it's fresh and free of additives or chemicals. Try it alone or thrown into your morning omelette I also like to eat it crumpled over a nice wild field salad . Enjoy!
Peppered Lamb Breakfast Sausage
Ingredients:
1 1/2 pounds ground organic lamb meat
1 tsp teaspoons coarse sea salt
1/2 tsp teaspoons freshly ground mixed pepper corns
1 teaspoons finely chopped fresh sage leaves
1 teaspoon finely chopped fresh thyme leaves
1/2 teaspoon finely chopped fresh rosemary leaves
1 tablespoon organic honey (omit for strict Paleo plans)
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper (optional)
additional coarse salt and cracked pepper
Mix all the ingredients together, combining well. Chill for a few hours or overnight, letting the flavors develop.
When ready, form the meat into long links or pattiesSprinkle the sausage with more cracked pepper and salt.
Fry the links or patties till cooked throughly.
Uncooked meat can be stored up to 3 days in an air tight container.
