My Cup Overflows: Dairy Free Vanilla Bean Ice Cream Floats


Ahhhh...root beer floats, creamy and frothy like a good cappuccino! There might even be a little good weather left to make some with your family. We like to make our own Dairy Free Vanilla Bean Ice Cream out of coconut milk and raw honey. Then we buy Oogave organic Root beer, I might be ambitious, but not enough to make my own root beer at this point. Maybe next year! Sometimes we even try other flavors like, ginger, watermelon creme, cola and key lime.

Try having a 'build your own float bar' with small cups and a melon scooper. That way you and your kids/friends can try all kinds of combinations.

Diary Free Vanilla Bean Ice Cream


Ingredients:

3 cups Organic full fat coconut milk (fresh or in the can)
1/2 cup raw honey/agave
2 vanilla bean pods split and scraped
2 tsp  gluten free vanilla extract

In a sauce pan over med/low heat, heat the coconut milk(do not boil the mixture)
Add the scraped vanilla beans (pods included)and steep for about five min. You must steep the pods in a warm liquid in order to release their flavor.

Cool the mixture slightly, take out the pods and then add the raw honey, mixing till complete dissolved.

Pour the whole mixture into your ice cream maker. From here on, follow your ice cream makers instructions. It takes our machine about 45 min.

This is a LARGE amount of ice cream. You can easily half the recipe. You can also lessen the honey amount by using some stevia extract in the recipe.

In my area, I find Oogave Organic Sodas at Sprouts and Central Market. Each store carries a different variety of flavors. Sprouts carries the root beer flavor. Central Market carries the cola flavor, which makes an amazing float!

  2. Shelley, The full fat coconut is the canned stuff. Unless you make your own...which takes ALOT of coconuts! The higher the fat content the more creamy the ice cream will be. Whole foods has a great price on their store brand organic coconut milk.

  6. These are ingredient I always have on hand,except the vanilla beans. They are out my budget at the moment. Do you think a high quality extract would do?

  7. Nevermind. :) I put almond extract, vanilla extract, cinnamon and cardamom. We'll see!

    1. Sounds awesome! I use extracts instead of vanilla bean all the time! However lucky for me the World Market by my house sales vanilla beans fur $3.
