This "no potato" potato salad will make everyone happy. It's low in carbs, bright, flavorful and with the homemade mayo, it's free of any "funny" ingredients. So if you can't have potatoes or just want a lower carb alternative to potato salad...this ones for you. Guilt free and packed with nutrition.
Turnip and Dill no potato "Potato" Salad
Ingredients
4-5 cups peeled/chopped organic turnips(about 5 medium turnips) Or 1 head of cauliflower
1/3 cup chopped organic green onions
1 TLBS diced roasted or fried organic garlic
1 TBLS fresh chopped basil
1 TBLS fresh dill
1/3 Cup Homemade Mayo or Vegan Homemade mayo (I use regular blanched almonds)
1/4 Fresh lemon juice (more or less for desired thickness of salad)
1/2 tsp coarse salt or more to taste
1/2 tsp coarse ground pepper or more to taste
optional: 1/3 cup no-nitrate bacon pieces or toasted pecans

Boil or roast turnips till tender(if making a cold salad cool or place in ice bath)
Add the first 5 ingredients mixing them well.
Add the mayo mixing well then start adding the lemon juice 1TBLS at a time till desired thickness of salad is reached.
Add salt and pepper and (optional) bacon to taste.
Variation:
To make it a bit spicier add 1TBLS of dijon mustard or 1tsp. of mustard powder or brown mustard seed.
