"Chunky Monkey" EGG & Dairy Free Ice Cream





Chunky Monkey by Ben & Jerry's is one of my all time favorite Ice creams and now I can have it again!  Well my dairy free, egg free and refined sugar free version anyway.

"Chunky Monkey" EGG And Dairy Free Ice Cream

For The Ice Cream Base:
2 cans full fat coconut milk (canned or fresh)
4 bananas
2-3 TBLS raw honey/agave 
1 tsp vanilla 
1 tsp lime juice

Mix- in's
1 cubed banana
1/2 to 1 cup thickly chopped dark chocolate or raw cocoa nibs)
1/2 cup walnuts (optional) 
BLEND the first 5 ingredients in a blender till smooth. 

Pour the mixture into your ice cream maker (I recommend the old school rock salt and ice kind)

Add the mixings

Follow the instructions on you ice cream maker. 
(It will take about 30 min. to get thick, then change the salt /ice ratio as per ice cream makers instruction, cover with a towel and leave it sit(not turning) for another 30 minuets to an hour. 

Makes about 2 quarts.  Recipe doubles well.

  1. I made this recipe early this week and it was a huge hit! It is delicious! We absolutely love it! I am most definitely making this again. The only change I made was to add peanut butter to the base of the ice cream and omit the nuts and lime juice (only because I didn't have any on hand - I'll try it with the lime juice next time). Scrumptious! Thanks for this recipe. :)
