I LOVE myself a lassi in the morning...wait, that just didn't sound right. Perhaps I should define the "lassi" I speak of! I mean the traditional Indian buttermilk drink kind of lassi. A lassi is not unlike a smoothie, perhaps not quite as thick. It is traditionally made with buttermilk and comes in all kinds of flavors from fruity, savory, spicy to salty.
I like to make my lassi's out of Kefir or yogurt. Here is one of my favorites with bananas for natural sweetness, cardamon for a little spice and lime to brighten it up. You can substitute cinnamon for the cardamon if you like.
Banana, Cardamon & Lime Lassi
Ingredients:
1 cup Kefir (dairy or coconut)
2 bananas
Juice of 1 lime
1/4 tsp cardamon or cinnamon
Honey to taste (optional)
a pinch of spice to top it off
Directions:
Throw it all into the blender (add more liquid if needed to keep it moving)
Blend on high for about 1 min.
Pour into a glass
Serve ( I like to place mine in the freezer for a few minuets to chill it)
Go back and make another one!
