Masala Chai




The weather is about to get cold here in Texas! Make some chai and snuggle in. Enjoy, cause summer will be here soon enough.

Masala Chai

2 cup coconut milk, fresh nut milk or raw dairy milk
1 cup water
3/4 inch piece of ginger(grated or smashed)
1/2inch cinnamon stick
4 peppercorns
3 cloves
3 cardamon pods(I add WAY more than this for my self)
1TBLS (or a teabag of black tea like darjeeling, sometimes I add more)
3Tbls  honey or agave

Dry roast the ginger by putting it under the broiler 1 min on each side(this step is optional)

Put the spices in grinder or a bag and roughly crush them. (you can also use powdered spices.  Just use less then the recipe calls for)
Put the  spices, tea and milk and water in a saucepan, bring to the boil.
Simmer  for 3 min then strain the tea(coffee press works great for this)

Add sweetener to your liking

Note: I taste the tea to test for strength, I like it strong and often times add powdered cardamon to the tea and simmer a little longer. You will find the spice ratio you like.  You can even exchange the water for all milk if you like.
